KOT: kitchen order ticket
A KOT, or kitchen order ticket, is the record of one order sent from the front of a restaurant to the kitchen: the items, the table or token, the time and the server. Traditionally a printed slip; on a modern POS it is digital, routed to each kitchen station and linked to the bill.

What is a kitchen order ticket system in a restaurant?
A kitchen order ticket system is whatever a restaurant uses to get orders from the people taking them to the people cooking them, and to keep those orders matched to the bill. At its simplest it is a pad of paper and a runner. At its most developed it is a POS that creates a digital KOT the moment an order is confirmed, splits it by kitchen station, shows each part on the right screen, times it, and settles all of it on one bill when the table pays.
The word "ticket" survives from the paper era, when the kitchen copy of an order was literally a slip on a spike above the pass. What has changed is the delivery. The KOT itself, the record of what was ordered for whom and when, is the same in both worlds, and it remains the order record even in a kitchen that runs entirely on screens.
A KOT never carries prices or tax. It is written for the cook, not the customer. The bill, which does carry both, is the same order seen from the other side of the pass, and on a well-built POS the two cannot disagree because they are one record.

The order is confirmed
At the counter, at the table on the Captain App, or by the guest through QR ordering. Confirming creates the KOT.

The tandoor sees the naan, the wok sees the noodles, the bar sees the drinks. Nobody reads a list that is mostly someone else's work.

Paper or screen
Printed KOT versus digital KOT
A printed KOT is the same record delivered on paper at the station. It works, it is cheap, and a kitchen with one cook and a short menu may never need more. Its weaknesses show at volume: slips get lost, greasy or out of order, nothing tells the front of house what is ready, and nothing measures how long a dish waited.
A digital KOT is delivered to a kitchen display instead, where it cannot be lost, carries a running timer and is cleared dish by dish. What is KOT?

What does KOT number mean?
The KOT number is the serial number the POS gives each kitchen order ticket, so the kitchen, the servers and the bill can refer to the same order without confusion. One table can generate several KOT numbers over a meal, one for each round of ordering, and all of them settle on one bill.
What is KOT in Zomato and Swiggy orders?
The same thing. When an online order is accepted, the POS creates a KOT for it and sends it to the kitchen exactly like a dine-in order. On DINO, aggregator orders arrive through the Urban Piper integration and land in the same KOT queue as everything else, so the kitchen works one list.
What is the difference between a KOT and a bill?
The KOT tells the kitchen what to make. The bill tells the customer what to pay. On a good POS they are the same order seen from two sides, so what the kitchen cooked and what the customer is charged always agree. A KOT never carries prices or GST; a bill always does.
Do I still need paper KOT slips?
Not necessarily. A KOT can be printed at the station, shown on a kitchen display screen, or both. Printers suit a small kitchen with one cook; screens suit a kitchen with more than one pair of hands, because they cannot be lost, they carry a timer and they can be cleared dish by dish.
