KOT vs KDS: what the difference means on a busy Friday
Restaurant buyers ask about KOT versus KDS as if it were a choice between two products. It is not. One is the order itself, the other is how the kitchen reads it - and confusing them leads to buying the wrong thing.

The short answer, because the question is usually asked as an either-or and it is not one: a KOT is the order, a KDS is a screen that displays it. Every restaurant POS produces KOTs. Only some send them to kitchen displays instead of printers. You are not choosing between KOT and KDS - you are choosing how your KOTs reach the people cooking.
What a KOT actually is
KOT stands for kitchen order ticket. When a waiter confirms an order, the POS creates a record of what was ordered, for which table, at what time, by whom - and sends it to whoever has to cook it. That record is the KOT. It is the instruction the kitchen works from and the reason the bill and the food agree at the end of the meal.
The important part is that the KOT is data, not paper. Paper is only one way of delivering it - and historically the most common one, which is why people use "KOT" and "the printed slip" interchangeably. A digital KOT is the same record, routed electronically.
What a KDS actually is
KDS stands for kitchen display system: a screen, usually mounted where the cooks can see it without touching anything, showing incoming KOTs as a live queue. Orders appear the moment they are confirmed, sit in the queue while they are being made, and are cleared by the cook with a tap or a bump bar when the dish goes out.
A kitchen display replaces the printer, not the KOT. Same order data, different destination - and a destination that can do things paper cannot: reorder itself by urgency, show how long a ticket has been waiting, split one order across stations, and tell the front of house what is ready without anyone walking to the kitchen.

Why paper hides your worst problem
A printed slip tells the kitchen what to cook. It does not tell anyone how long that order has been sitting there. On a busy Friday, when twelve slips are clipped to a rail, the eye goes to the top or to whichever is easiest - and the table that has been waiting twenty-five minutes is indistinguishable from the one that ordered two minutes ago.
This is the single biggest practical difference. A display sorts by time and makes ageing visible, so the order that is late looks late. Most of the service complaints a restaurant gets are about waiting, and waiting is precisely the thing paper cannot surface.
When a printer is genuinely enough
Plenty of kitchens do not need a screen. One cooking station, a dozen tables, a cook who can see the pass from where they stand - a printer works, costs less, and has one fewer thing to go wrong. Be honest about which of these describes you rather than buying a screen because it sounds modern.
A KDS starts earning its place when any of these are true: you have more than one station and orders need splitting between them; you run delivery, where the promised time is the product; your covers per service are high enough that ticket order stops being obvious; or you are running more than one brand out of one kitchen, as a cloud kitchen does.
What matters more than either: routing
The question worth asking a vendor is not "do you have KDS" - almost everyone says yes. It is what happens to one order containing a starter, a main from the grill and a drink. Does it arrive as one ticket at one place, leaving someone to shout the drinks order across the room? Or does each line reach the station that makes it, while the system still knows they belong to one table and should leave together?

Both, usually
Most kitchens that install a KDS keep one printer. Screens depend on power and a network, and a service does not stop because a switch rebooted. A printer as the fallback path for KOTs, with the screen as the everyday route, is a sensible arrangement rather than a compromise - and it is worth confirming your POS can fall back that way without anyone reconfiguring it mid-service.
The demo checklist
- Place one order containing items from three different stations and watch where each line lands.
- Leave a ticket unattended and confirm it visibly ages on the screen.
- Modify an order after it has fired, and check the kitchen sees the change rather than a second ticket.
- Cancel an item and confirm it disappears from the station that was making it.
- Unplug the network for thirty seconds and ask what happens to orders taken in that window.
- Mark a dish ready and confirm the front of house sees it without walking to the kitchen.
